This Irish Soda bread is simple, slightly sweet and tastes AMAZING with some sausage!

Equipment
1 Mixing spoon You can use a stand mixer, but not needed!
1 Mixing Bowl Again, stand mixer is fine, but do not over mix!
1 Measuring cup
1 Teaspoon
1 9 inch baking pan Round or square
Ingredients
3cupsGluten Free Flour BlendWe use Bobs Red Mill 1:1 Gluten Free Flour Blend
2tspBaking Powder
1tspBaking Soda
1tspCinnamon(This flavor is strong, add more or less to your liking!)
½tspSalt
½cupRaisinsCranberry Raisins, Golden, or Currants also work!
2Eggs
½tspVailla Extract
½cupsugarWe use organic cane sugar from zulka
1cupCoconut Milk
Instructions
Preheat the oven to 350°F
Mix the dry ingredients together in a mixing bowl.
Use a large spoon to stir together.
Add in the wet ingredients and mix until just incorporated.
Pour in your raisins!
Grease a 9 inch pan, round or square.
Pour the dough into the pan and spread with spoon. It should hold its shape and be slightly sticky.
Cut a cross in the dough
Bake at 350°F for 50 minutes or until a knife can be poked through the center and come out clean.
Notes
This Irish Soda Bread is sweet and moist. To create a more traditional flavor leave out the vanilla and cinnamon and you may add 1-2 tablespoons caraway seeds.
