Simple and Sweet Gluten Free Irish Soda Bread

This Irish Soda bread is simple, slightly sweet and tastes AMAZING with some sausage!

Cook Time 50 minutes

Equipment

  • 1 Mixing spoon You can use a stand mixer, but not needed!
  • 1 Mixing Bowl Again, stand mixer is fine, but do not over mix!
  • 1 Measuring cup
  • 1 Teaspoon
  • 1 9 inch baking pan Round or square

Ingredients

  • 3 cups Gluten Free Flour Blend We use Bobs Red Mill 1:1 Gluten Free Flour Blend
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon (This flavor is strong, add more or less to your liking!)
  • ½ tsp Salt
  • ½ cup Raisins Cranberry Raisins, Golden, or Currants also work!
  • 2 Eggs
  • ½ tsp Vailla Extract
  • ½ cup sugar We use organic cane sugar from zulka
  • 1 cup Coconut Milk

Instructions

  • Preheat the oven to 350°F
  • Mix the dry ingredients together in a mixing bowl.
  • Use a large spoon to stir together.
  • Add in the wet ingredients and mix until just incorporated.
  • Pour in your raisins!
  • Grease a 9 inch pan, round or square.
  • Pour the dough into the pan and spread with spoon. It should hold its shape and be slightly sticky.
  • Cut a cross in the dough
  • Bake at 350°F for 50 minutes or until a knife can be poked through the center and come out clean.

Notes

This Irish Soda Bread is sweet and moist. To create a more traditional flavor leave out the vanilla and cinnamon and you may add 1-2 tablespoons caraway seeds.
