This salad is amazing! We ate something similar at a friends house and have recreated it over and over and over again. Light, simple and delicious, this salad is packed with protein and perfect for those hot summer days.
When We Eat Summer Salad
At friends houses, on day trips, as side dishes, and as the main meal, we love to make up a good salad! Perfect to bring to a backyard barbecue or take to a day at the park, salad is easily portable, and customizable. We especially like salads for a quick and light lunch! Find the dressing your children enjoy and add fresh fruit to encourage little hands to dig in!
Our Favorite Summer Salad Ingredients
Grilled Turkey – We have totally substituted cold chicken for this and it is still a delicious salad. We even cut up cold cut turkey and as in this tutorial oven roasted the turkey to throw in! Still a great option! However grilled turkey breasts covered in some seasoning and sliced up, is our number one choice!
T-Bone Seasoning – If you have been around the blog, or our house a while, you’d know we use this seasoning more then any thing else. Here it is again!
Salad – Here you can really switch it up. We have used all spinach, all arugula, a romaine lettuce mixture, and it all works!
Chickpeas – A fun and yummy protein source, the chickpeas, or garbanzo beans add another level to this summer salad.
Dried Cranberries – We used dried cranberries. You can use fresh raspberries, blueberries, or whatever other dried or fresh fruit your family loves.
Dressing – We have a few go to dressings. This salad goes great with a simple oil and vinegar dressing. Easily changed, pack small containers of different dressings to meet each child’s needs!
The Easiest Summer Salad
First cook the turkey! We use a turkey London Broil. Season both sides with T-Bone and grill for about 10 minutes on each side. Remember you can always use already cooked chicken, or whatever you have on hand!
Then, cut it up and let it cool.
Next add the salad to the bowl. Today we had a lot of arugula so that is what we went with.
Pour in some chickpeas! We use 1 can per salad.
Add the dried or fresh fruit to taste.
Mix it well and set the dressing out next to the salad. This keeps the salad from getting soggy and allows for customization.
Grilled Turkey Summer Salad
Equipment
- 1 Salad Bowl
- 1 Grill
Ingredients
- 1 3 lb Turkey London Broil
- 4 cups Arugula or salad of choice
- 1 cup Dried cranberries or fruit of choice
- 1 can Chickpeas
- Oil and Vinegar Dressing (We usually use Ken's or Boars Head)
- T-Bone Season
Instructions
- Coat the turkey in T-Bone and grill 10 minutes on each side
- Let cool and prep the salad
- Pour the arugula, chickpeas, and dried cranberries into a bowl
- Add the turkey
- Serve with dressing!
If you have picky eaters you can set the whole salad up buffet style to allow some of the items to be left out.
