Simple and Fun!
These are a long standing tradition in our home, that I have adjusted so we can continue to enjoy them, even with peanut allergies! I try to make most of our food from scratch, but these are an exception!
I lived with my grandmother growing up and every Christmas and Easter she melted a ton of chocolate to make seasonal themed lollipops and peanut butter bites! When our eldest was diagnosed with a peanut allergy, we found sun butter, which has been great in our peanut free home!
These are so easy, that little hands who like to help in the kitchen can really enjoy the process. Scooping, counting, measuring, and mixing, while preparing a sweet treat!
How to Make This Chocolate Marshmallow Sunbutter Dessert Recipe!
Melt your chocolate over a double boiler.
If you are like us and do not own a double boiler, boil some water in a pot and place a smaller pot or pan on top!
Stir in 1/2 cup sun butter or your favorite nut butter. You can totally add more to taste! Once combined turn heat down.
Grease or line a mini muffin tin. Lining makes for an easy removal and looks great for serving but greasing works too!
Pour one tablespoon of the mixture into each cup.
Add about 5 marshmallows to each cup.
Pour another teaspoon over the top of each cup!
Put the pan in the refrigerator for 30 minutes or until solid.
Take them out and enjoy, or store for later!
They really are that simple for a fun little treat that is sure to sweeten your Easter or special occasion! While these firm up, draw an Easter Cross with your children!
Chocolate Marshmallow SunButter Bites
Equipment
- 2 pots or pans
- 1 Mini muffin tin
- 1 Measuring cup
Ingredients
- 10 oz mini chocolate chips (allergy friendly)
- ½ cup sunbutter (you can use whatever nut butter you prefer)
- 1 bag marshmallows
Instructions
- Grease mini muffin tin or line with mini muffin cups for easy removal
- Melt 10 oz of chocolate chips, stirring often
- Add in 1/2 cup of SunButter
- Remove from heat and pour 1 teaspoon in each muffin cup
- Add about 5 marshmallows to each cup
- Pour another teaspoon of the chocolate mixture on top
- Place in the fridge about 1 hour or until solid
- Store air tight in fridge or freezer! Enjoy!
Notes
When they are done you can place them in Easter Eggs for a hand made at home Resurrection Sunday egg hunt! Make sure you wrap them though, because they might melt! Foil or saran wrap is perfect! You could also cut them into fourths to have bite size pieces to serve!
